Why, Hello There Blog. I haven't gotten to talk to you lately.
We had a terrific family trip up to the Okanogan and stayed at the Fabulous Veranda Beach Resort. We had quite a few days of smokyness due to the fires up in Kelowna, BC where about 11,000 residents were evacuated. But the lake was beautiful, the sun was hot and the water was refreshing. Basically the kiddos had the run of the place and we parents had a blast just hanging out. From there we were off to Vancouver for some time with old high school friends and some great shopping.
One of my sister-in-laws makes a killer Mojito which now has a name change. From now on it is dubbed the "Stef-i-to" and must be pronounced in a low and decidedly slow manner, enabling you, the drinker, the pleasure of enjoying the sound and taste of a well made drink. (Of course, after your third one, you must say it slower, but LOUDER!)
The Recipe for a "Stef-i-to" (makes four)
2 limes well squeezed (squoozen, squosed?)
5-6 mint leaves
4 -6 oz. of rum
Sprite
1. Combine all ingredients except sprite into a small glass jar and muddle with a muddler (?) I've made this at home since and used my pestle and it muddled just fine. Basically you are smooshing it all together to mingle the flavors.
2. Pour equal amounts into each glass and add a ton of ice.
3. Pour Sprite to the top of the glass
4. Add another Mint leaf for pretty-ness
5. DRINK!
6. LAUGH!
7. Make another one!

Funny Story....My brother-in-law was throwing the youngest nephew up in the air in the pool and was very successful at launching him to great heights. That kid was flying! After my brother-in-law got tired, the nephew asked me if I would throw him up in the air and man, that three year old weighs a ton! (Mister Muscle Man already) So, I attempted in my weak way to throw him the same way my brother-in-law did. I managed to lift him out of the water about 1/2 inch and succeeded only in pushing him forward in the water. Totally unsuccessful.
Nephew: Again, Again!!!!!
Me: Ooooffff!!!!!!!
Nephew: Pointed his finger in the air and shouted, "LAME!"

The kids are already in San Diego with friends and family, and we are heading out this week after some work and a mail check.
